St. John's Club Kale Soup Recipe

Ingredients

  • 2 Tbsp. Extra virgin olive oil
  • 1 lb Chorizo or possibly andouille sausage cut into 1/2"-thick
  •     slices
  • 1 lrg Onion minced
  • 6 x Garlic cloves - (to 8) chopped
  • 1/4 c. Minced fresh parsley
  • 1/4 lb Dry navy white beans soaked overnight
  •     and liquid removed
  • 1/4 lb Dry red beans soaked overnight
  •     and liquid removed
  • 4 quart Chicken stock
  • 2 lrg Potatoes peeled and diced
  • 1 bn Kale stemmed and torn
  • 2 x Bay leaves
  • 1/4 tsp Dry thyme
  • 1 1/2 tsp Salt
  • 1/4 tsp Red pepper flakes
  •     Freshly-grnd black pepper to taste
  • 1/2 c. Minced fresh mint
  • 1 loaf of crusty Portuguese bread
