  • 3 sm heads Belgian endive, cut lengthwise in 1/4 inch wide strips, * see note
  • 2 lrg red bell peppers, cut in 1/4" strips
  • 1 sm head Boston lettuce
  • 1/4 c. red wine vinegar
  • 1 x clove garlic, chopped
  • 2 Tbsp. onion, chopped
  • 1 sm mild green chile, parch, peel, seed mince, Or possibly
  • 1 ounce diced green chiles, canned
  • 1 sm tomato, finely minced
  • 1/2 c. extra-virgin extra virgin olive oil
