- To make the pastry:
- 1/2 cup white rice flour
- 1/4 cup tapioca flour
- 1/4 cup garbanzo bean flour
- 1 tsp xanthan
- pinch of Celtic sea salt
- 2 oz or 56 gms of Earth Balance vegan buttery sticks or Nuttalex vegan spread
- 4 Tbsp coconut palm sugar
- 1 tsp pure vanilla extract
- 2 Tbsp cold filtered water
- 1 tsp finely chopped lemon zest
- To make the filling:
- 1/2 cup grated apple (peeled and grated)
- 2 Tbsp orange zest (about 2 medium oranges)
- 1 tsp lemon zest (about 1 small lemon)
- 1/4 cup freshly squeezed orange juice
- 1 cup raisins
- 1/2 cup dried apricots
- 1/2 cup dried cherries
- 1/2 cup dried cranberries
- 1/2 cup dried blueberries
- 1/4 tsp nutmeg
- 1/4 tsp allspice
- 1 tsp cinnamon
- 2 Tbsp maple syrup
