Emerils Crab Pies Recipe

Ingredients

  • 2 Tbsp. unsalted butter
  • 1/4 c. chopped yellow onions
  • 1/4 c. chopped green bell peppers
  • 1/4 c. chopped red bell peppers
  • 1/4 c. chopped celery
  • 1 Tbsp. plus 2 tsp Creole Seasoning
  • 1/2 tsp salt
  • 1 Tbsp. plus 1 tsp chopped garlic
  • 1 lb lump crab meat, picked over for shells and cartilage
  • 1/4 c. minced green onions
  • 1 tsp Worcestershire sauce
  • 1/2 tsp Tabasco
  • 1/2 c. heavy cream
  • 2 x Large eggs, lightly beaten, in separate c.
  • 2 Tbsp. breadcrumbs
  •     Basic pie dough, divided into 12 equal balls, and chilled (sufficient to make 2 9 inch crusts)
  • 2 Tbsp. extra virgin olive oil
