Coconut Spiced Fish Recipe

Ingredients

  • 1/2 Tbsp. Sunflower oil
  • 1 lrg Onion, minced
  • 1 x Bay leaf
  • 2 tsp Turmeric
  • 1 Tbsp. Mild curry pwdr
  • 1 Tbsp. Desiccated unsweetened coconut
  • 450 ml Vegetable stock
  • 180 gm Runner beans, frzn
  • 480 gm Cod or possibly salmon fillet, skinned and cut into 4cm cubes
  • 120 ml Curd cheese
  •     Salt and freshly grnd black pepper
  •     Coriander for garnish, roughly minced (optional)
