Aubergine Parmesan Recipe


  • 1 med aubergine sliced 1/3-1/2 inch
  •     thick
  • 1 c. favorite tomato sauce or possibly spaghetti sauce (1 to 2)
  • 1/2 c. Italian style breadcrumbs (1/2 to 1)
  •     sliced onion
  •     sliced green pepper optional
  • 1/4 c. parmesan cheese Or possibly 1/4-1/2 reduced fat mozzarella cheese
  • 1 x egg white beaten with
  • 1 Tbsp. water
  •     herbs:
  •     fresh or possibly dry basil
  •     oregano
  •     garlic
