Chickpea Vegetable Soup Recipe

Ingredients

  • 5 c. Vegetable Stock or possibly vegetable broth
  •     (see separate recipe)
  • 1 Tbsp. extra virgin olive oil plus
  • 1 tsp extra virgin olive oil
  • 1 med onion, diced
  • 2 med clove garlic, chopped
  • 2 stalk celery, diced
  • 1 c. minced green cabbage
  • 1 tsp dry basil
  • 1 tsp dry tarragon
  • 1 tsp dry thyme
  • 1 tsp salt
  • 1/4 tsp freshly grnd pepper
  • 1/4 tsp caraway seeds
  • 1/4 tsp red pepper flakes
  • 2 sm carrots, diced
  • 1 med all-purpose potato, peeled and diced
  •     (1 c.)
  • 1 1/2 c. cooked or possibly rinsed canned chickpeas
  • 2 c. canned crushed tomatoes
  • 1 tsp balsamic or possibly red wine vinegar
  • 3 Tbsp. minced fresh basil or possibly parsley
