Southwestern Stuffed Peppers Recipe

  • 2 lrg red bell peppers
  • 1/4 lb green beans
  • 1 tsp canola oil
  • 5 x green onions, thinly sliced
  • 1 can (15 ounces) whole kernel corn, liquid removed
  • 1/2 c. canned diced tomatoes, well liquid removed (save juices)
  • 1 tsp dry basil leaves
  • 1/4 c. panko (Japanese-style) coarse bread crumbs
  • 3/4 c. (3 ounces) shredded jack or possibly jalapeno jack cheese (divided use)
