  • 1 x (3 inch) piece ginger, cut in half lengthwise, lightly bruised with the

  • 1 sm yellow onion
  • 2 quart store-bought low-sodium chicken broth
  • 2 c. water
  • 3 Tbsp. fish sauce (nuoc mam)
  • 1 Tbsp. sugar
  • 1/4 tsp salt
  • 2 x chicken thighs or possibly breasts
  • 1 lb dry 1/16 inch-wide rice sticks, cooked and liquid removed according to
  •     package directions
  • 1/3 c. thinly sliced yellow onion
  • 2 x scallions, cut into thin rings
  • 3 Tbsp. finely minced cilantro
  • 1/2 lb bean sprouts
  • 10 sprg Asian basil
  • 3 x Thai bird chilies or possibly 1 serrano chili, cut into thin rings
