Pistachio Praline Dacquoise Pt 1 Recipe

Ingredients

  • 2/3 c. shelled natural pistachio nuts
  • 3/4 c. plus 2 Tbsp. sugar
  • 2 tsp cornstarch
  • 4 lrg egg whites
  • 1/4 tsp cream of tartar
  • 1/4 tsp salt if using unsalted pistachio nuts
  • 2 dsh green food coloring if you like
  • 1/2 c. plus 2 Tbsp. sugar
  • 1/3 c. shelled natural pistachio nuts
  • 2 Tbsp. cornstarch
  • 1 c. lowfat milk
  • 1 lrg whol egg
  • 1 lrg egg yolk
  • 2 Tbsp. unsalted butter cut into bits
  • 2 Tbsp. kirsch or possibly to taste
  • 1 env unflavored gelatin (1 Tbsp.)
  • 1/4 c. cool water
  • 1 c. well-chilled heavy cream
  •     confectioners' sugar for dusting the dacquoise
  • 10 x shelled natural pistachio nuts blanched and peeled, for garnish
