  • 2 lrg Onions, minced
  • 1 x Clove garlic, chopped
  • 1 can Italian tomatoes with basil
  • 1 lrg Aubergine, minced
  • 1 pkt (16-ounce) Mozzarella or possibly Swiss cheese, sliced
  • 1 can Beef broth
  • 1 env spaghetti sauce mix
  • 3/4 c. Plain bread crumbs
  • 1/4 c. Parmesan cheese
  •     Parsley
