- 1 med onion coarsely minced
- 2 med turnips peeled, and

- 1 lb butternut squash unpeeled, seeded,
- Â Â and minced into 1" cubes
- 1 sm cabbage cored, and
- Â Â sliced into 1"-thick strips
- 3 x leeks trimmed, and
- Â Â coarsely minced
- 1/2 c. garlic cloves
- 2 Tbsp. kosher salt
- 1/2 tsp freshly-grnd white pepper
- 10 ounce haricot verts (green beans) trimmed, and
- Â Â cut into 1" pcs
- 1 c. cooked peeled fava beans
