- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 5 eggs separated
- 1/2 cup cold water
- 1 1/4 cups white sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon cream of tartar
- Rum Syrup
- 1/3 cup white sugar
- 1/3 cup water
- 1/3 cup light rum
- Ricotta Cheese Filling
- 2 pounds whole milk ricotta cheese
- 2 1/4 cups confectioners' sugar
- 4 ounces semi-sweet chocolate bar chopped roughly, pieces should not be larger than 1/2 inch
- Sugar Frosting for topping (prepare the following day)
- 1 1/2 cup confectioners sugar
- 1/4 cup water
- grind of a lemon or lime
