Sicilian Cheese Cake/cassata Recipe

Ingredients

  • Cake
  • 1 1/2 cups cake flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 5 eggs separated
  • 1/2 cup cold water
  • 1 1/4 cups white sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cream of tartar
  • Rum Syrup
  • 1/3 cup white sugar
  • 1/3 cup water
  • 1/3 cup light rum
  • Ricotta Cheese Filling
  • 2 pounds whole milk ricotta cheese
  • 2 1/4 cups confectioners' sugar
  • 4 ounces semi-sweet chocolate bar chopped roughly, pieces should not be larger than 1/2 inch
  • Sugar Frosting for topping (prepare the following day)
  • 1 1/2 cup confectioners sugar
  • 1/4 cup water
  • grind of a lemon or lime
