  • 3 lb well-marbled beef chuck cut 2 1/2" pcs
  • 1 x slab bacon - (8 ounce)
  • 6 Tbsp. unsalted butter plus
  • 1 Tbsp. softened unsalted butter
  • 1 Tbsp. extra virgin olive oil
  •     Kosher salt to taste
  •     Freshly-grnd black pepper to taste
  •     All-purpose flour for dredging, plus
  • 1 Tbsp. all-purpose flour
  • 1 Tbsp. tomato paste
  • 1 lb pearl onions blanched, and
