Manhattan Style Clam Chowder Recipe

Ingredients

  • 1/4 lb diced bacon
  • 1 lrg onion diced
  • 2 x carrots thinly sliced
  • 3 x celery stalks with leaves thinly sliced
  • 1 Tbsp. minced fresh parsley (or possibly dry)
  • 1 lrg can tomatoes with juice broken up
  • 1 1/2 tsp salt
  •     Freshly-grnd black pepper to taste
  • 1 x bay leaf
  • 1 tsp dry thyme
  • 3 med potatoes diced
  • 2 x to 3 cans chopped clams - (6 to 7 ounce ea) with juice
  • 1 bot clam juice - ( 8oz)
  • 1 Tbsp. flour blended with
  • 1 Tbsp. melted butter or possibly a little of
  •     the bacon grease (optional)
