- 1/2 pkt frzn artichokes, quartered
- 2 c. long-grain brown rice
- 1/2 c. tomato paste
- 1Â 1/2 c. plum tomatoes, minced
- 2 x bay leaves
- 2 tsp Creole seasoning
- 1/2 tsp dry thyme
- 1 tsp liquid smoke flavoring
- 4 c. vegetable stock
- 15 ounce cannellini beans, rinsed and liquid removed
- 1/2 c. frzn peas, or possibly fresh
- 1/2 c. frzn corn kernels, or possibly fresh
- 1/2 c. green onions, minced
