Ingredients

  • 1 1/2 lb red bell peppers
  • 1 lb ripe tomatoes
  • 1 lb cucumber
  • 6 ounce crustless French or possibly Italian bread (weight after the crust is removed)
  • 2 med garlic cloves peeled
  • 1 c. minced sweet onion
  • 1/4 c. extra-virgin extra virgin olive oil
  • 1/4 c. balsamic vinegar
  • 2 Tbsp. tomato paste
  • 1/2 c. coarsely-minced peeled seeded cucumber
  • 2 x hard-boiled Large eggs very coarsely
  •     minced
  • 1/2 c. minced pitted mild brine-cured
  •     black olives
  • 2 x Haas avocados
  •     Lemon juice
  •     Chopped parsley for garnish
