Squash Casserole Recipe

Ingredients

  • 1 lb squash (a mix of squash and zucchini is good also)
  • 1 lrg sweet onion
  •     egg substitute equivalent to 1 egg
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 x 3/4 c. vegan mayonnaise
  • 1/2 x 3/4 c. tofu "Parmesan cheese"
  •     bread crumbs or possibly Ritz-style cracker crumbs for topping
  • 1/3 c. margarine, melted
