Artichoke Stew Recipe

Ingredients

  • 16 x trimmed and halved Baby artichokes
  • 2 x ten ounce pkgs. frzn artichokesten ounce pkgs. frzn artichokes, liquid removed and patted dry
  • 1 x lemon halved
  • 3 sprg minced fresh rosemary
  • 3 x large sprigs of fresh thyme
  • 3 x bay leaves
  • 1/4 c. extra virgin extra virgin olive oil - (60ml)
  • 5 clv garlic, slivered
  • 8 x shallots peeled and quartered with the root end in tact
  • 1 x fennel bulb, trimmed and cut into 1-inch pcs
  • 5 x small fingerling potatoes cut into 1-inch pcs
  • 2 Tbsp. plain white flour - (30ml)
  • 1 tsp salt - (5ml)
  •     Freshly grnd pepper to taste
  • 1 c. dry white wine - (250ml)
  • 1 1/2 c. chicken broth - (375ml)
  • 3 Tbsp. coarsely minced flat leaf parsley - (45ml)
  • 1 x coarsely minced large clove of garlic
  • 1 x tsp of freshly grated lemon zest - (5ml)
