- 2 tsp Dijon mustard
- 1/2 tsp salt
- 1/8 tsp pepper
- 1/4 c. minced green/or possibly red bell peppers or possibly a combination of both
- 1/4 c. minced green onions (scallions)
- 2 lb fresh asparagus, cooked and liquid removed
- 2 x tomatoes, sliced
- Â Â a few slices of red radishes (optional)
- 1/2 x cucumber, sliced thinly (optional)
- 1 Tbsp. minced fresh curly parsley
