Chicken Chili Recipe

Ingredients

  • 4 c. yellow onion coarsely minced
  • 1 1/2 c. green bell pepper coarsely minced
  • 4 x cloves garlic
  • 1 1/2 lb boneless skinless chicken breast halves in 1/4" pcs
  • 1/4 c. chili pwdr
  • 2 tsp grnd coriander
  • 1 tsp grnd cumin
  • 1 tsp powdered chipotle pepper
  • 1/2 tsp salt
  • 1 1/2 c. Roasted New Mexican chilies peeled/diced*
  • 1 x 29 ounce can tomatoes minced with liquid
  • 1 x 16 ounce can chicken broth or possibly 2 c. fresh
  • 12 ounce apple cider, dark beer or possibly dry white wine
  • 1 x 6 ounce can tomato paste ** see note
  • 2 Tbsp. chipotle puree *** see note
  • 3 x bay leaves
  • 1 x 31 ounce can garbanzo beans liquid removed ****
