Aubergine Soup Recipe

Ingredients

  • 2 x aubergines peeled, and
  •     cut into 1" dice
  • 1 lrg onion diced
  • 2 lrg zucchini cut 1/2" dice
  • 3 lrg tomatoes cut 1/2" dice
  • 1 head garlic separated into clove
  • 1/2 lb mushrooms quartered
  • 1/2 c. extra virgin olive oil
  • 6 c. chicken broth or possibly water - (to 7 c.)
  • 1/2 c. red wine
  •     Salt to taste
  •     Freshly-grnd black pepper to taste
  • 2 Tbsp. minced basil
  • 2 Tbsp. minced oregano
  • 2 Tbsp. minced parsley (optional)
