- 4 sm acorn squash preferably orange skinned

- 1/2 c. currants
- 1 c. hot vegetable broth or possibly as needed
- 1Â 1/2 Tbsp. extra virgin olive oil
- 2 x onions finely minced
- 4 x garlic cloves chopped
- 2 x apples cored and cut into 1-c. of 1/4-inch dice
- 1Â 1/2 c. corn kernels cooked optional
- 1Â 1/4 c. very coarse fresh bread crumbs
- Â Â or possibly finely diced bread
- 5 Tbsp. minced fresh herbs: including
- Â Â flat-leaf parsley
- Â Â basil
- Â Â tarragon
- Â Â thyme and/or possibly
- Â Â sage
- 1 tsp grated lemon zest
