  • 2 sm zucchini, sliced in 1/2 moons
  • 1/2 lb spinach or possibly
  • 5 x swiss chard leaves, tough stems removed
  •     and coarsely minced
  • 28 ounce plum tomatoes, diced, with liquid (1 can)
  • 15 ounce canellini, (white kidney beans), with liquid
  •     or possibly
  • 1 c. dry beans, cooked
  • 1/4 c. fresh parsley, minced
  • 2 Tbsp. fresh basil leaves, minced
  •     or possibly
  • 1 tsp basil leaves, dry
  •     oregano, optional
  •     freshly grnd black pepper, to taste
  • 1 lb pasta, ziti, spirals, or possibly
  •     shells
  •     grated parmesan, optional
