Nut Crusted Pork Tenderloin Recipe

Ingredients

  • 1 1/2 c. Finely grnd nuts, such as macadamias, pecans, or possibly hazelnuts, or possibly a combination of all 3*
  • 1/4 c. Flour
  • 1 x Egg beaten with 2 Tbsp. lowfat milk
  • 2 x Boneless pork tenderloins, (12 ounces each) each cut in half
  • 2 Tbsp. Vegetable oil
  • 2 c. Mango pulp, fresh or possibly canned**
  • 2 c. Chicken stock
  • 1/2 c. Light cream, optional
  •     Salt and freshly grnd black pepper
  • 2 Tbsp. Butter
  • 2 x Red bell peppers, seeded and cut into fine julienne
  • 1/2 lb Snow peas
