Cornbread Pecan Stuffing Recipe

Ingredients

  • 8 c. Cornbread
  • 6 x English muffins
  • 1/2 c. Butter
  • 8 stalk celery, finely minced
  • 2 x Onions, finely minced
  • 1 1/2 c. Toasted pecans, minced
  • 2 x Red bell peppers, finely minced
  • 2 x Green chiles, roasted, peeled and diced, (or possibly 2 poblano chiles)
  • 1 lb Chorizo sausage, (or possibly bulk)
  • 1 Tbsp. Fresh oregano or possibly 1/4tsp dry
  • 6 x Fresh sage leaves or possibly 1/2tsp dry
  • 2 Tbsp. Fresh basil or possibly 1/2tsp dry
  • 2 Tbsp. Parsley or possibly 1tsp dry
  •     1/ ts black pepper
  •     1/ ts cayenne pepper
  •     Salt to taste
  • 1/2 c. Chicken stock,
  • 2 1/2 c. Heavy cream
