Panzanella Recipe

Ingredients

  • 2 c. Extra virgin olive oil
  • 2 x Garlic cloves
  • 1/2 x French baguette cut into 1" cubes
  • 3 Tbsp. Chiffonade of basil
  • 1/4 c. Extra-virgin extra virgin olive oil plus
  • 1 Tbsp. Extra-virgin extra virgin olive oil
  • 3 Tbsp. Balsamic vinegar
  •     Salt to taste
  •     Freshly-grnd black pepper to taste
  • 1 tsp Chopped garlic
  • 1/2 sm Red onion julienned
  • 4 x Roma tomatoes seeds removed,
  •     and julienned
  • 1/2 lb Mozzarella Cheese cut into 1" cubes
  • 1/2 lb Salami cut into 1" cubes
  • 1 x Radicchio head julienned
