Crab - Stuffed Chicken Breasts Recipe

Ingredients

  • 4 whole chicken breasts, halved, skinned & boned
  • 4 T butter
  • 1/2 c. thinly sliced onion
  • 1/4 pound mushrooms, thinly sliced
  • 3 T flour
  • 1/4 teaspoon thyme leaves
  • 1/2 c. each chicken broth/stock, lowfat milk & dry white wine (or possibly additional 1/2 c. broth)
  • Salt & pepper
  • 8 ounce crab meat (or possibly imitation crab)
  • 1/3 c. each finely minced parsley & fine dry bread crumbs
  • 1 1/2 c. (6 ounce) shredded Swiss cheese
