Lobster Thermidor Recipe

Ingredients

  • 4 x 6- to (8-oz) frzn rock lobster tails, boiled according to package
  •     directions and
  •     liquid removed
  • 3 Tbsp. chopped green onions (white parts only)
  • 2 Tbsp. butter or possibly margarine
  • 1/3 c. dry white wine
  • 1 tsp dry mustard
  • 6 Tbsp. butter (not margarine,3/4stick, divided)
  • 1/4 c. all-purpose flour
  • 2 1/2 c. lowfat milk or possibly 1 1/4 c. each lowfat milk and chicken broth, fish stock or possibly
  •     vegetable
  •     cooking water
  • 1/2 tsp salt
  • 1/8 tsp white pepper
  • 2 Tbsp. chopped onion
  • 1 sm sprig fresh thyme or possibly a healthy pinch of dry thyme
  • 1/4 x bay leaf
  •     Healthy pinch grnd nutmeg
  • 1/4 c. plus 4 tsp. grated parmesan cheese (divided)
  • 1/4 c. grated gruyere cheese
