Mini Lemon Soufflé Puddings With Sable Biscuits

Ingredients

  • 100g/3½oz unsalted butter, plus extra for greasing

  • 85g/3oz icing sugar, plus extra for dusting

  • 140g/5oz plain flour, plus extra for dusting

  • 1 free-range egg yolk

For the lemon soufflé puddings
  • 1 tbsp butter, melted

  • 50g/2oz caster sugar, plus 1tbsp caster sugar

  • 2 lemons, juice only

  • 1 tbsp icing sugar

  • 3 free-range eggs, yolks and whites separated

  • 35g/1¼oz caster sugar

  • 20g/¾oz plain flour

  • 100ml/3½fl oz whole milk

  • 1 vanilla pod, split

To serve
  • 1 lemon, peeled and split into segments

  • 1 orange, peeled and split into segments

  • 5 fresh mint leaves, torn

  • icing sugar, for dusting
