Chicken In Pancetta With Pine Nut, Sun-blush Tomato And Basil Stuffing

Ingredients

Ingredients For the stuffing
  • 25g/1oz pine nuts

  • dash olive oil, for frying

  • 2 shallots, finely chopped

  • 2 garlic cloves, finely chopped

  • 85g/3oz fresh white breadcrumbs

  • small bunch fresh basil leaves, chopped

  • 85g/3oz sunblush tomatoes in oil, chopped

  • 1 small free-range egg

  • salt and freshly ground black pepper

For the chicken
  • 4 boneless, skinless chicken breasts

  • about 8 slices pancetta (depending on size)

For the sauce
  • 1 tbsp olive oil

  • 1 white onion, finely chopped

  • 2 sprigs thyme

  • 300ml/½ pint dry vermouth

  • 142ml/5fl oz carton single cream

  • knob of butter

To serve
  • steamed baby new potatoes

  • steamed Tenderstem broccoli
