Ingredients

Ingredients For the spicy okra
  • 2 tsp vegetable oil

  • ¼ onion, sliced

  • 100g/3½oz okra, sliced lengthways

  • 2 tbsp white wine

  • 1 tbsp tomato purée

  • 1 tbsp honey

  • pinch chilli flakes

  • salt and freshly ground black pepper

For the coconut and basil sauce
  • 1 tbsp butter

  • ¼ fresh coconut, flesh sliced thinly

  • 2 tbsp white wine

  • 2 tbsp coconut milk

  • 3 tbsp double cream

  • salt and freshly ground black pepper

  • small handful fresh basil leaves, torn

For the snapper
  • 1 tbsp vegetable oil

  • 1 fillet red snapper, skin on

  • 100g/3½oz rice, cooked according to packet instructions, to serve
