  • 1 mango, peeled, stone removed, flesh chopped into thin slices

  • 1 chicken breast, skin removed

  • 2 slices prosciutto

  • 2 tbsp olive oil, plus extra for drizzling

  • 1 small red onion, chopped

  • 125ml/4fl oz mango and apple juice

  • 125ml/4fl oz white wine

  • 2 tbsp double cream

For the vegetables
  • 100g/3½oz new potatoes

  • salt and freshly ground black pepper

  • 4 cherry tomatoes, cut in half

  • 5 asparagus spears
