Wild Pigeon With Broccoli Sprouts And Omega Rich Seeds

Ingredients

Ingredients For the marinated pigeon
  • 250ml/9fl oz red wine

  • 40g/1½oz coarse sea salt

  • 50g/1¾oz Xylitol sugar-free sweetener (available in most supermarkets)

  • 1 sprig savoury

  • 1 bay leaf

  • 5 cloves

  • 2 tsp finely chopped garlic

  • ½ tsp black peppercorns

  • 1 orange, finely grated zest only

  • 1 lemon, finely grated zest only

  • 10 juniper berries

  • 4 pigeon breasts

For the seed mix
  • 12 coriander seeds, crushed in a pestle and mortar

  • 5 sesame seeds

  • 5 pumpkin seeds

  • 5 sunflowers seeds

  • 5 poppy seeds

  • 5 hemp seeds

  • 2 tbsp light soy sauce

For the apricot purée
  • 3 apricots

  • Xylitol sugar-free sweetener, to taste (available in most supermarkets)

  • salt, to taste

For the herb mix
  • 2 tbsp chopped mixed soft herbs (flatleaf parsley, chervil, basil, coriander)

To serve
  • 50g/1¾oz broccoli micro sprouts

  • 150g/5oz mixed baby leaf salad (including chard and mizuna)
