Duck Breasts With Bubble And Squeak And Sherry Vinaigrette

Ingredients

Ingredients For the duck
  • 2 duck breasts

  • salt and freshly ground black pepper

For the bubble and squeak
  • 2 large onions, sliced and sautéed in butter, cooled

  • 900g/2lb mashed potatoes (without added butter), cooled

  • 900g/2lb green cabbage, sliced and cooked until tender, cooled

  • 100g/3½oz bacon lardons, fried until crisp, cooled

  • plain flour, to bind

  • salt and freshly ground black pepper

  • olive oil, for frying

For the sherry vinaigrette
  • 100ml/3½fl oz sherry vinegar

  • 50g/2oz redcurrant jelly

  • 100ml/3½fl oz virgin olive oil

  • salt and freshly ground black pepper
