Apple Charlottes With Thyme Custard


Ingredients For the charlottes
  • 500g/1lb 2oz Cox apples, peeled, cored, roughly chopped

  • 60g/2½oz caster sugar

  • ½ lemon, juice only

  • 2 tbsp apricot jam

  • 3 tbsp water

  • 75g/3oz butter

  • 10 slices white bread, crusts removed

For the thyme custard
  • 200ml/7fl oz double cream

  • 200ml/7fl oz milk

  • 2 sprigs fresh thyme

  • 6 free-range egg yolks

  • 75g/3oz caster sugar

To serve
  • double cream, lightly whipped
