  • 1 stick lemon grass, sliced

  • 6 lime leaves - (optional)

  • 1 large red chilli, seeded and chopped

  • 2 green bell peppers, seeded and chopped

  • 2 bunches spring onions, sliced

  • 500g/18oz Cherry tomatoes

  • 1 large orange, sliced

  • 4 cloves garlic, peeled and sliced

  • 300ml/½ pint white wine

  • splash of light soy sauce

  • salt and black pepper

  • 1 bottle sweet chilli sauce

  • 250g/9oz crème fraiche

  • 1 bunch coriander

  • 2 cups Thai Jasmine rice

  • 6 lengths of foil and baking parchment
