  • 70g/2½oz unsalted butter, softened

  • 3 free-range eggs, yolks only

For the carrageen moss pudding
  • 3 leaves gelatine

  • 25g/1oz dried carrageen moss, washed

  • 250ml/9fl oz double cream

  • 1 vanilla pod, split lengthways

  • 6 free-range eggs, yolks only

  • 100g/3½oz caster sugar

  • 100ml/3½fl oz full-fat milk

  • 1 heaped tsp agar-agar flakes

  • 250ml/9fl oz buttermilk

  • 175ml/6fl oz condensed milk

For the mint leaves
  • 1 free-range egg, white only

  • 16 mint leaves

  • 50g/1¾oz caster sugar

For the elderflower jelly
  • 300ml/10fl oz sparkling elderflower pressé, preferably organic

  • 100g/3½oz elderflowers, washed

  • 50g/1¾oz caster sugar

  • large pinch agar-agar

For the quince and rosehip coulis
  • 100g/3½oz dried rosehips

  • 30g/1oz caster sugar

  • 3 tbsp quince jelly
