  • ½ onion, finely chopped

  • 2 tsp ground cinnamon

For the dressing
  • 300ml/10fl oz extra olive oil

  • 5 lemons, juice and zest

  • 1 garlic clove, crushed

  • salt and freshly ground black pepper

  • 60g/2oz ground sumac

For the salad
  • 1 pitta bread, torn into small pieces

  • 8 plum tomatoes, deseeded, quartered

  • ½ cucumber, cut into batons

  • ½ green pepper, cut into strips

  • 8 radishes, trimmed and sliced

  • 1 shallot, sliced

  • 60g/2¼oz packet rocket

  • 1 Little Gem lettuce, leaves separated

  • handful fresh chopped mint
