Thai-style Sui-mei (thai Steamed Dumplings)

Ingredients

Ingredients For the sweet soy sauce
  • 2-3 tbsp dark sweet soy sauce

  • 2 tbsp white vinegar

  • pinch salt

  • 1 tsp sugar

  • 1 small piece fresh root ginger, finely sliced

  • 1 red chilli, seeds removed, finely chopped

For the sui-mei (dumplings)
  • 8 medium-sized raw tiger prawns, peeled, de-veined and finely chopped

  • 3 black shiitake mushrooms, finely diced

  • 25g/1oz pork mince

  • 1 free-range egg white

  • salt and freshly ground black pepper

  • sesame oil, to taste

  • 8-10 small wonton wrappers

  • 1 carrot, cut into thin discs

For the fried garlic
  • 3 tbsp oil, for frying

  • 1-2 garlic cloves, finely sliced

To serve
  • 1 tsp fish roe

  • handful fresh chives, chopped

  • drizzle chilli oil
