  • 3 eschallots, sliced

  • 2 tsp fresh ginger, grated
  • 3 Tbsp chives, snipped
  • 1 bunch bok choy, finely chopped
  • 2 Tbsp sweet chilli sauce
  • 3 Tbsp fresh coriander, finely chopped
  • ¼ cup canned bamboo shoots, drained and finely chopped
  • 100g pork mince
  • 25 round spring roll wrappers, moistened
  • Bok choy, to serve
  • Dipping Sauce
  • ½ tsp sesame oil
  • ½ tsp oil
  • 1 Tbsp soy sauce
  • 1 Tbsp fresh lime juice
  • 1 Tbsp hoisin sauce
  • 1 small red chilli, seeded and finely chopped
