Tea Smoked Duck Breasts With Lobster, Apple Purée, Maple Jelly And Bitter Leaves

Ingredients For the jelly
  • 100ml/3½fl oz maple syrup

  • 50ml/2fl oz water

  • 1 star anise

  • 2.5cm/1in piece cinnamon stick

  • 3 whole cloves

  • 2 sheets leaf gelatine

For the apple purée
  • 3 Braeburn apples, peeled, cored and chopped

  • 50ml/2fl oz apple juice

  • 50ml/2fl oz sparkling white wine

  • squeeze lemon juice

  • 2-3 tsp sugar, or to taste

For the duck
  • 4 duck breast, skin-on

  • salt and freshly ground black pepper

  • 150g/5oz brown rice

  • 150g/5oz dark brown sugar

  • 100g/3½oz Darjeeling leaf tea

For the salad
  • 1 small cooked lobster

  • 4 tbsp sunflower or groundnut oil

  • 1-2 tsp freshly squeezed lemon juice

  • 100g/3½oz mixed bitter leaves, such as chicory, radicchio, endive
