Asian Noodles With Crispy Sole Fillets


Ingredients For the sole
  • 4 x 75g/3oz sole fillets, skin removed

  • 100g/3½oz plain flour, seasoned with salt and freshly ground black pepper

  • 1 free-range egg, beaten

  • 150g/5½oz Japanese panko breadcrumbs

  • 2 limes, zest only

  • 100g/3½oz poppy seeds

  • vegetable oil, for frying

For the dressing
  • 150ml/5 ½ fl oz black rice vinegar

  • 150ml/5½fl oz red wine vinegar

  • 150ml/5½fl oz peanut oil

  • 150ml/5½fl oz olive oil

  • 1 tbsp pickled pink ginger

  • salt and freshly ground black pepper

For the pickled mushrooms
  • 150ml/3½fl oz rice vinegar

  • 150g/3½fl oz sugar

  • pinch salt

  • 100g/5oz shiitake mushrooms, finely sliced

For the noodles
  • 200g/7oz rice noodles, cooked according to packet instructions

  • 100g/3½oz cashew nuts, roasted

  • 16 sunblush tomatoes

  • 1 tbsp chopped fresh coriander
