Tea-smoked Chicken With Crunchy Chicory Salad

Ingredients

  • 2 boneless, skinless chicken breast fillets

  • 1 tsp sesame oil

For the smoking mixture
  • 200g/7oz jasmine tea

  • 200g/7oz brown sugar

  • 200g/7oz long-grain rice

For the walnut oil dressing
  • ½ tsp Dijon mustard

  • 1 shallot, finely chopped

  • 1 garlic clove, finely chopped

  • 1 lemon, juice only

  • 3 tbsp white wine vinegar

  • ½ tsp sugar

  • 100ml/3½fl oz sunflower oil

  • 100ml/3½fl oz walnut oil

For the salad
  • ½ cucumber, peeled (skin retained), seeded and cut into sticks

  • 50g/2oz salt

  • cucumber peel, cut into thin strips

  • 4 spring onions, cut to the same length as cucumber sticks

  • 1 head chicory, cut into thin strips

  • 3 tomatoes, peeled, seeded and cut into thin strips

  • lemon rind, blanched, cut into thin strips

  • salt and white pepper

To serve
  • 50g/2oz lamb's lettuce

  • 1 pear, peeled, poached and quartered

  • 2 tomatoes, peeled, seeded and diced
