Lamb Chops With Chickpea And Feta Salad

Ingredients

Ingredients For the lamb
  • 6 lamb chops, French trimmed

  • 1 tsp ground cumin

  • salt and freshly ground black pepper

  • 2 tbsp olive oil

For the chickpea salad
  • 55ml/2fl oz olive oil

  • 2 medium red onions, sliced

  • 2 red chillies, chopped

  • 5 garlic cloves, chopped

  • 110ml/4fl oz cider vinegar

  • 400g/14oz canned chickpeas, rinsed and drained

  • 100g/3oz feta cheese, crumbled

  • handful cherry tomatoes

  • small bunch fresh mint, leaves only

  • small bunch fresh coriander, leaves only

  • salt and freshly ground black pepper
