Grilled Lamb With Couscous And Yoghurt Dressing

Ingredients

Ingredients
  • 4 lamb neck fillets (about 100g/4oz each)

  • 2 tbsp olive oil

  • 1 clove garlic, chopped

  • 4 tbsp balsamic vinegar

  • ½ glass red wine

  • 4 sprigs of rosemary

  • 300ml/½ pint meat stock

  • a pinch of sugar

  • salt and freshly ground black pepper

  • a good pinch of celery salt

  • a good pinch of dried oregano

  • ½ lemon, juice only

  • 2 handfuls of green beans

For the tzatsiki
  • ½ cucumber

  • 1 clove garlic

  • salt

  • a bunch of mint, chopped

  • ½ lemon, juice only

  • 1 tbsp olive oil

  • 250ml/9fl oz Greek yoghurt

For the couscous
  • 85g/3oz couscous

  • 60g/2¼oz pine nuts, toasted

  • 2 handfuls of seedless raisins

  • a small bunch of flatleaf parsley, chopped

  • 2 lemons, juice of both and zest of 1 only

  • 8 tbsp olive oil

  • a pinch of ground cumin
