  • 1 small onion, diced

  • 225g/8oz gooseberries

  • 75g/3oz white preserving sugar

  • 3 tbsp cider vinegar

For the scones
  • 50g/2oz butter, plus extra for greasing

  • 200g/7oz self-raising flour, plus extra for dusting

  • 2 tsp baking powder

  • 1 large chunk fresh horseradish root, or to taste, peeled and grated

  • 150ml/5fl oz full-fat milk

For the smoked mackerel pâté
  • 200g/7oz cream cheese

  • 150g/5oz smoked mackerel, skin and bones removed, flesh flaked

  • 3-4 tbsp chopped fresh dill

  • salt and freshly ground black pepper

  • 2 tbsp lemon juice

  • microherbs or salad leaves, to serve, optional
