Steamed Salmon With Lime, Roasted Chickpea And Spring Onion Salad

Ingredients

Ingredients For the steamed salmon
  • 1 x 125g/4½oz salmon fillet

  • ½ lemon, zest only

  • ½ lime, zest only

  • 1 tbsp chopped fresh parsley

  • 1 tbsp chopped fresh dill

  • salt and freshly ground black pepper

  • 1 tbsp olive oil

For the chickpea salad
  • 2 tbsp olive oil

  • 200g/7oz tinned cooked chickpeas, drained

  • 1 clove garlic, crushed

  • 2 tbsp balsamic vinegar

  • 3 spring onions, finely sliced

  • 3 vine tomatoes, de-seeded and chopped

For the avocado sauce
  • ½ ripe avocado

  • 2 tbsp double cream

  • 1 tbsp sparkling water

  • 1 clove garlic, crushed

  • salt and freshly ground black pepper

To serve
  • 1 slice of lime
