Avocado And Bacon Hotpot


Ingredients For the avocado and bacon hotpot
  • 2 tbsp butter

  • 1 small white onion, finely chopped

  • 1 rasher bacon, finely chopped

  • 1 firm avocado, skin and stone removed, flesh cut into small cubes

  • 1 tbsp dry sherry

  • 2 tbsp double cream

  • 55g/2oz cheddar cheese, grated, plus extra to serve

  • salt and freshly ground black pepper

For the herb salad
  • 1 tbsp olive oil

  • 2 tsp white wine vinegar

  • 1 tsp Dijon mustard

  • small handful fresh parsley leaves

  • small handful fresh basil leaves

  • small handful fresh dill

  • 1 small sprig fresh thyme, leaves only

  • salt and freshly ground black pepper

To serve
  • 1 slice white bread, toasted
