• splash water

• 2 tsp rice vinegar

• 2 tomatoes, cored, quartered

For the leek couscous

• 1 tbsp grapeseed oil

• 1 leek, finely chopped

• 100g/3½oz couscous

• ½ lemon, juice only

• salt and freshly ground black pepper

For garnish

• 1 tbsp grapeseed oil

• 1 leek, finely sliced on the diagonal
